SWEDISH GINGER COOKIE ELKS AND SQUIRRELS
It is high time to make your ginger cookies for Christmas. This Swedish recipe is easy to follow and makes the most spicy, crisp and yummy cookies. The dough is very easy to make, and to work with, and will easily make you thin and delicious Elghs, Christmas Trees etc. The dough needs to rest over night, so plan ahead. Recipe to follow here:
150 ml melted butter
150 ml treacle
150 ml whipping cream
150 ml sugar
150 ml brown muscovado sugar
1 liter of plain flower
15 ml baking soda
2 tsp cinnamon
2 tsp ground cloves
2 tsp ground ginger
2 tsp ground cardamon
1 tsp allspice
1 tsp salt
Mix the butter with the treacle and warm. Mix in all the other ingredients. It will make a quite loose dough. Let it rest over night. Roll out and use cookie cutters, mine are from Ikea! 3 minutes in a 180 degrees warm oven will be enough! Will make lovely thin and crisp cookies, about 150!

ORGANIC CHEESE AND SMOKED HERRING ETC @ SKANSENS CHRISTMAS MARKET IN STOCKHOLM
I went to the famous Christmas Market @ Skansen in Stockholm yesterday. This wonderful park/museum and zoo hosts this lovely market up till Christmas...We talked to the organic cheesemaker Gert Andersson from Raftsjöhöjden (North part of Sweden) about how to get to know science etc throught keeping goats and cows organically in this part of the world. Of course I bought some of his lovely cheeses!
Smoked herring is just one of the lovely things to eat outside in this lovely part of Stockholm.
On our way back to the city we passed throught the Old Town (Gamla Stan) and had a quick look at their Christmas Market. Christmas decorations in red, white and gold in this stand. Visit this traditional market until 23 December.
