HIGH TIME FOR APPLE PIE

We do not have a garden at our house in the Stockholm Archipelago but somebody planted an apple tree in the 50-ies. It does not give many apples but enough to make an apple pie or two! Here is the recipe! Start by putting the oven on at 200 degrees C!

You need

4-5 green and firm apples (cooking apples)
100 ml light brown moscovado sugar
1 tbsp cinnamon

For the pastry

450 ml plain flour
50 ml light brown moscovado sugar
1 tbsp cold water
150 g softened butter, cubed

Start by making the pastry. Mix all the ingredients with you hands and work until
soft and not sticky. If needed add more flour or cold water.
Use a big pie form (25 cm diameter) and "knuckle" out the pastry.
Leave some pastry for the decorations. Leave in the fridge (pricked by a fork) for 30 minutes.

Core and peel the apples and cut into wedges. Mix with the sugar and cinnamon.
Add the apples to the pie, poor the juice over (see below) and decorate with the rest of the pastry. Cook for 20-25 minutes. Serve with custard or whipped cream. Delicious!
