SERRANO HAM STARTER AND NECTARINE CAKE AT GÅSÖ SOUTH

Yes, I know, its Saturday and I should have taken the day off. But there was a big thunderstorm over Gåsö and I took the time to blog a bit. Yesterday I had my dear sister for dinner and this is just before dinner. China from www.ikea.com, 365+, wine goblets also from Ikea. Napkins from Linum. Simple but yummy starter, melon with Serrano ham and cherry tomatoes. Sprinkled with rosé peppar and oliveoil and some fresh Thyme.

Made a Nectarine cake today. Here is how you make it. Beat 175 g of softened and chopped butter with 165 g caster sugar (200 ml) and 2 tbl spoons of grated lemon rind until light and creamy (6-8 min. Beat in 3 eggs one by one. Add 150 g plain flour (250 ml), 1 tsp baking powder and 70 g of natural yogurt. Spoon into a greased cake tin (25 cm)top with slices of 3 or 5 small Nectarines (Peaches goes very well too) and bake at 160 degrees Celsius for approx 1 hour. Turn onto a wire rack after 10 minutes of cooling and dust with icing sugar. Serve with cream or crème fraiche or natural yogurt. Juicy and perfect with tea, coffee or as desert!
