...more from CLARA´S BUFFET

As promised before here are the rest of the Buffet dishes that Clara requested for her birthday party last Saturday. Chicken kebabs. Marinated chicken thighs (soya sauce, garlic, chili sauce or what YOU want at fancy, cut in small pieces and put on skewers, grill in the oven for 10-15 minutes or on the BBQ. Serve with crème fraiche flavoured with chili etc...

Quinoa salad, a recipe that Clara got from a friend. Boil the quinoa as it says on the packet. Fry some salted and sliced squash/zucchini in olive oil. Take the seeds out of a couple of Pomegranates. Slice red onions finely. Chop some goat cheese. Mix the ingredients together and flavour with some olive oil, salt and pepper. Sprinkle with some basil leaves and serve!
  • Savoury Muffins. Make them in advance and freeze to save time on the day! You will need:
  • 300 g flour (500 ml)
  • 2 eggs
  • 2 tsp baking powder
  • 200 ml milk
  • 1 tsp salt
  • 1/2 tsp course black pepper
  • 100 g feta cheese (chopped)
  • 100 g black or green olives (pitted)
  • 100 ml olive oil
  • 10-15 muffins cases
  • some cherry tomatoes for topping
  • Mix all the ingredients but leave half of the olive and feta cheese
  • put in the cases and press in the rest of the cheese and olives and decorate with some cherry tomatoes.
  • bake in the oven for 10-15 minutes at 200 degrees Celsius.
Suitable for home freezing!
  • "Tjälknöl" from Boar! Means very slow cooked and then put in a salty marinade. Claras father Claes (Clabbe) hunts and shoots a lot of Boar. This is how you make it! Put the meat in the oven frozen at 75 degrees Celsius, when thored enough stick in a thermometer. Cook until it reaches 70 degrees Celsius (6-15 hours). Cool down. Meanwhile make a salty marinade by mixing
  • 1 litre of water
  • 100 ml salt
  • 2 tsp sugar
  • 1 tsp black peppercorns
  • 1 bay leaf
Heat all the ingredients to the boil. Cool down and let the meat rest in the marinate for 4-5 hours. Cut the meat in thin slices and serve with potato salad  etc...

Salmon baked in the oven. So simple and loved by everyone! Put the whole side on an oven dish. Sprinkle with salt flakes, pepper, rosé pepper, lime rind, add some lime juice and bake in the oven for 20 minutes at 200 degrees Celsius! Decorate with lemon, limes and dill.

Yummy Strawberry Cakes.
So very Swedish and so very Summer! Buy some already made sponge for cakes or make you own. Cut the sponge in half horizontally. Mash strawberries and mix with some custard and spread on half of the sponge. Put the other half on top and spread whipped cream on top. Decorate with Strawberries and some more whipped cream. Yummy and very fresh!
