  • I promised you some more from Claras party. It is late and I have spent today making cupcakes with Moa, Hanna, Douglas and Stella, aged from 6 to 11! Nice but tiring. Will give you a full report later this week! Meanwhile, a tasty potato salad that goes with most meats from the BBQ. Start by boiling some new potatoes. Make a dressing from 
  • the juice from one lemon
  • 300 ml olive oil
  • 1 tbsp Dijon mustard
  • 2 chopped garlic cloves
  • 1 tsp honey
  • salt and pepper
  • 50 ml water
Whisk the ingredients together. Add some chopped spring onions and some capers. Let it stand for about 30 minutes. Pour the dressing over the potatoes (the dressing will be enough for about 4 kilos of potatoes so be careful not to drown them). Sprinkle some rosé peppar over the salad and decorate with some finely sliced radishes. The leftovers are nice to fry or grill in the oven! More from Claras buffet tomorrow!
